Excellent Cookie Recipe (not low fat!)


CYNDI’S FAVOURITE OATMEAL CHOCOLATE CHIP COOKIES

1 cup shortening
¾ cup firmly packed brown sugar
¼ cup granulated sugar
1 tsp vanilla
1 tsp baking soda
¼ cup boiling water
2 cups quick-cooking rolled oats
½ tsp salt
1½ cups all-purpose flour
6 oz semi-sweet chocolate chips
½ cup chopped nuts (optional)

Beat shortening, sugars and vanilla until light and fluffy. Add flour and salt; mix well. Dissolve baking soda in boiling water; add to flour mixture. Stir in rolled oats, nuts, and chocolate chips. Drop by teaspoonful, 2 inches apart, onto ungreased baking sheets; flatten with fork dipped in cold water. Bake at 350F for 10 to 12 minutes. Makes about 4 dozen cookies.
